Chocolate Mint Cookies

Ingredients
  • 1¼ cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ tsp salt
  • ½ cup softened butter
  • 1 cup granulated sugar
  • 1 egg
  • ¾ tsp peppermint extract
  • 8 oz. chocolate chips
Instructions
  1. Whisk together flour, cocoa, and salt.
  2. Cream together butter and sugar.
  3. Add in egg and peppermint and mix until blended.
  4. Slowly add flour mixture.
  5. Roll cookie dough into a 1½" - 2" round log and wrap in wax or parchment paper.
  6. Freeze until dough is firm, about 1 hour.
  7. Preheat oven to 350°.
  8. Line baking sheet with parchment paper.
  9. Slice cookies about ¼" thick and place on baking sheet.
  10. Bake 10 to 12 minutes.
  11. Allow cookies to cool completely.
  12. Melt chocolate chips in a microwave safe bowl for 30 seconds then stirring and repeating until chocolate is smooth.
  13. Line a baking sheet with parchment or wax paper.
  14. Drop cooled cookies one at a time in the chocolate being sure to coat evenly on both sides - use a fork to lift out cookies and remove any excess chocolate.
  15. Gently place the cookies on the baking sheet and then allow for the chocolate to set either on the counter or in the fridge.
