Bird’s Nests!

Ah, another holiday and another excuse to make yummy treats!  I don’t normally go all out with the holiday treats, as I have a little that is just not into the sweets.  *insert a great big ol’ sad mama face*  But I have seen this idea for cute little spring treats floating around for the last couple of years and thought we’d give it a go this Easter!  And, what do ya know?  The boy loved it!



 

Here’s what ya need to make these super cute and yummy Bird’s Nests:
 
Butter flavored cooking spray or 1 tablespoon unsalted butter
1 bag (11.5 oz.) milk chocolate chips
1 cup creamy peanut butter
1 12 oz. bag of chow mein noodles  (If you’re not familiar with chow mein noodles – I wasn’t – they taste a bit like graham crackers!)

Here’s what ya gotta do:  
  • First, get yourself a super cute kitchen helper!

  • Lightly spray (or use the butter to coat) a regular muffin tin
  • In a large microwave-proof bowl, heat the chocolate chips in 30-second intervals until thoroughly melted, being sure to stir after each interval. 
 
 
  • Once the chocolate chips have begun to melt, add the peanut butter, mixing well until smooth and creamy.  Mmm, smells like a giant glob of melted Whatchamacallits!  Resist the urge to eat the whole bowl.  A licked finger (or spoon!) will have to do.
 
  • Add the chow mein noodles (a cup at a time until it’s the consistency you want; more noodles = less chocolatey bits.  I used the whole bag and all the noodles were perfectly coated!), stirring with a wooden spoon or rubber spatula, until completely coated.
 
  • Use a large spoon to scoop the chocolate noodle mixture into the muffin tin.  Be sure to make a little indentation in the center of each nest for the egg!

  • Place one (or more) chocolate candy eggs in the center of each nest while the nests are still melted.
  • Place the muffin tin in the fridge for an hour or so until the nests have hardened.  
  • To remove the nests, gently insert the tip of an off-set spatula or knife under a “twig” and it should pop right out.  If not, place them back in the fridge to chill a bit more.
  • Enjoy!

 

Options:  There are a ton of ways you can tailor this treat.  Use pretzel sticks in stead of the noodles for a sweet/salty twist.  Use peanuts, jelly beans, or bits of dried fruit for the eggs.  Mix up the kinds of ‘chips’ you melt:  mint, butterscotch, white chocolate, etc.
