I had some ground beef to use up last night and was stuck for something other than spaghetti or tacos! I had never tried making stuffed peppers but I found a recipe that looked simple enough to follow (even without photos!) but it seemed to be lacking flavor and freshness. So, as usual, I butchered modified the recipe just a tad. Okay, the recipe was completely unrecognizable afterwards. 😉 But it got rave reviews and calls for seconds!
This recipe can, of course, be modified to your family’s liking or dietary needs.
- Use your favorite homemade taco seasoning.
- Use ground turkey instead of beef.
- Add a little cheddar cheese to the top before baking.
- And I think next time around I will add corn to the mixture!

Mexican Stuffed Peppers

Yields: Serves 6
Ingredients
- 1 pound extra-lean ground beef
- ½ cup uncooked long grain white rice
- 1 cup water
- 6 large green bell peppers
- 1 small red onion
- 5 roma tomatoes
- 2 (8 oz.) cans tomato sauce
- 1 packet taco seasoning (reserve 1 tsp.)
- salt and pepper to taste
Instructions
- Preheat oven to 350° F.
- In a saucepan, add rice and water - bring to a boil. Reduce heat, cover, and cook 20 minutes.
- Cut the tops of the bell peppers off very near the top. Remove and discard the stems, seeds, and membranes and rinse thoroughly.
- Stand peppers open side up in a baking dish - if necessary, slice bottoms of peppers a bit to stabilize. Save the tops and any bottom trimmings for the filling mixture.
- Dice tomatoes, onion, and pepper tops.
- Add ground beef and diced veggies to a skillet over medium heat. Cook until beef is evenly browned and veggies are tender - drain liquid.
- Add 1 can of tomato sauce, cooked rice, and taco seasoning to the beef mixture - salt and pepper to taste.
- Fill peppers with beef mixture.
- Mix reserved tsp of taco seasoning and remaining can of tomato sauce - spoon over stuffed peppers.
- Bake 1 hour - basting with tomato sauce every 15 minutes or so, until the peppers are tender.
